Tangy salsa with apples, radishes, celery, and cranberries, perfect for pork or sausage.
Ingredients:
  • 1 cup chopped Granny Smith apple
  • 1 cup chopped radishes
  • 1 cup chopped celery
  • 1/3 cup chopped green onions
  • 1/4 cup chopped fresh basil leaves
  • 3 tablespoons chopped sweetened dried cranberries
  • 3 tablespoons olive oil
  • 3 1/2 teaspoons honey
  • 1 1/2 teaspoons cider vinegar
  • 1 teaspoon grated lemon peel
  • 4 1/2 teaspoons lemon juice
  • Salt and pepper to taste
Instructions:
  • Combine the apple, radishes, celery, onions, basil, and cranberries in a medium bowl, gently mixing together.
  • Combine oil, honey, vinegar, lemon zest, and lemon juice in a small bowl. Drizzle over apple mixture, ensuring everything is coated. Season generously with salt and pepper.
  • Chill in the fridge for 30 minutes to 2 hours. Serve cold or at room temperature.
