Delicious chicken skewers with zesty pea and spinach pilaf - a guaranteed family favorite!
Ingredients:
  • 300g rice
  • 625ml chicken stock
  • 100g snow peas, thinly sliced
  • 500g Grill RSPCA Approved Chicken Breast Souvlaki Kebabs
  • 4 red radishes, trimmed, halved, thinly sliced
  • 60g Baby Spinach
  • 40.00 ml flaked almonds, toasted
  • 2 tsp grated lemon rind
  • 42.00 gm lemon juice
  • Greek-style yoghurt, to serve
  • Lemon wedges, to serve
Instructions:
  • In a medium saucepan over high heat, combine rice, stock, and butter. Bring to a simmer. Reduce heat to low, cover, and simmer for 10 minutes. Add snow peas, cover, and cook for an additional 5 minutes until rice and snow peas are tender.
  • Preheat the grill on high. Arrange kebabs on a foil-lined baking tray. Grill for 10 minutes, turning occasionally, until beautifully golden and fully cooked.
  • Mix together the radish, spinach, almonds, lemon rind, and lemon juice into the pilaf. Season to taste. Serve the kebabs with the flavorful pilaf, alongside yogurt and lemon wedges.
