Succulent and flavorful Greek chicken skewers grilled to perfection, served with creamy homemade tzatziki.
Ingredients:
  • 0.25 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1.5 pounds skinless, boneless chicken breast halves - cut into bite-sized pieces
  • 6 wooden skewers, or as needed
  • 1 (6 ounce) container plain Greek-style yogurt
  • 0.5 cucumber - peeled, seeded, and grated
  • 1 tablespoon olive oil
  • 2 teaspoons white vinegar
  • 1 clove garlic, minced
  • 1 pinch salt
Instructions:
  • Assemble all of your ingredients.
  • Marinate chicken: In a large resealable bag, mix olive oil, garlic, lemon juice, oregano, and salt. Add chicken, coat well with the marinade, remove air, seal bag, and refrigerate for 2 hours.
  • Make the sauce: Combine yogurt, cucumber, olive oil, vinegar, garlic, and salt in a bowl. Chill in the refrigerator for 1 to 2 hours to enhance flavors.
  • Place wooden skewers in a refreshing cold water bath for approximately 15 minutes. Heat up an outdoor grill to medium-high heat and lightly coat the grate with oil.
  • Thread the marinated chicken onto the soaked skewers, leaving behind any excess marinade.
  • Grill the skewers on high heat, turning regularly until golden on all sides and chicken is cooked through, for about 7 to 8 minutes per side.
  • Drizzle with homemade tzatziki sauce and savor every bite!
