Kid-friendly lunch idea that's easy for kids to make.
Ingredients:
  • 60ml (1/4 cup) fresh lemon juice
  • 27.30 gm olive oil
  • 1 3/4 red onions, cut into wedges
  • 2 medium (about 130g each) green zucchini, cut into 1cm-thick slices
  • 500g chicken tenderloins
  • Salt & freshly ground black pepper
  • 1 x 400g can lentils, rinsed, drained
  • 2 large ripe tomatoes, coarsely chopped
  • 40.00 ml fresh continental parsley
  • 4 wholemeal pita pockets
Instructions:
  • 1. Preheat the grill on high heat. 2. Mix lemon juice, oil, and garlic in a bowl. 3. Skewer onion, zucchini, and chicken. 4. Brush the skewers with the lemon oil mixture. 5. Season with salt and pepper. 6. Grill the skewers about 6cm from the heat source for 5 minutes on each side until cooked through. 7. Grill the pita bread for 30 seconds on each side.
  • In a medium bowl, mix together lentils, tomato, and parsley. Season with salt and pepper. Serve by placing pita on plates and topping with the salad and chicken souvlaki.
