Delicious Greek chicken souvlaki salad with romaine, bell pepper, cucumber, tomatoes, and tzatziki dressing.
Ingredients:
  • 1 tablespoon Greek seasoning
  • 1 lemon, juiced
  • 2 cloves garlic, finely grated or minced
  • 1 pound boneless chicken breasts, quartered lengthwise
  • 6 tablespoons tzatziki sauce
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 pinch salt
  • 1 head romaine, trimmed, washed and torn into bite-sized pieces
  • 0.5 cup thinly sliced red bell pepper
  • 0.5 English cucumber, sliced
  • 8 ounces cherry tomatoes, halved
Instructions:
  • In a glass bowl, whisk together 1 tablespoon of olive oil, Greek seasoning, lemon juice, and garlic until well combined. Add chicken to the marinade, making sure it is fully coated. Refrigerate for 2-4 hours.
  • In a small bowl, combine tzatziki, olive oil, lemon juice, and salt. Chill dressing until ready to use.
  • Get your outdoor grill nice and hot by preheating it to high heat, then give the grate a light coating of oil.
  • Grill the chicken pieces for a total of 10 minutes, flipping halfway through, until fully cooked with clear juices and reaching an internal temperature of 165°F (74°C).
  • In a salad bowl, mix romaine lettuce, bell pepper, cucumber, and cherry tomatoes. Add tzatziki dressing and toss well to coat. Divide salad into 4 portions and top each with cooked chicken.
