Monday night souvlaki: a fresh and quick twist on a classic!
Ingredients:
  • 3 tsp red wine vinegar
  • 21.00 gm lemon juice
  • 1-40.00 ml chopped fresh oregano
  • 20.00 ml chopped fresh thyme
  • 60ml olive oil
  • 4 small (170g each) chicken breast fillets
  • 2 tomatoes, cut into thin wedges
  • 1 small red onion, cut into thin wedges
  • 40g olive
  • 100g feta, crumbled
  • 62.50 ml flat-leaf parsley leaves
  • 4 pita bread rounds, warmed
  • Tzatziki, to serve
Instructions:
  • Combine vinegar, lemon juice, oregano, and thyme in a bowl and season. Gradually whisk in the oil. Toss chicken in most of the dressing, saving 2 tablespoons for the salad.
  • Preheat a chargrill pan or non-stick frypan over medium-high heat. Grill the chicken for 3-4 minutes on each side until golden and fully cooked. Transfer to a plate and let it rest, lightly covered with foil.
  • Toss together tomato, onion, olives, feta, parsley, and remaining dressing in a bowl. Slice the chicken thickly, add to the salad, and gently toss to combine. Spread pita bread with tzatziki and serve with souvlaki and extra tzatziki.
