Cozy up with a comforting pea soup topped with garlic bacon toast.
Ingredients:
  • 4 slices garlic bread, at room temperature
  • 2 thin bacon rashers, cut crossways into 1cm-thick slices
  • 25g (5 tsp) butter
  • 4.60 gm olive oil
  • 1 small brown onion, chopped
  • 600g fresh peas, shelled
  • 275ml vegetable liquid stock
  • 185ml (3/4 cup) thin cream
  • Freshly ground black pepper
Instructions:
  • Preheat your oven to 230°C while lining a baking tray with foil. Arrange garlic bread slices in a single layer on the tray and add 2-3 strips of bacon on top of each slice. Bake in the preheated oven for 8-10 minutes until golden and crispy.
  • In a saucepan over medium heat, melt butter and oil until foamy. Sauté onions for 2-3 minutes until soft. Add peas and cook for another 2-3 minutes. Pour in stock, bring to a boil, and simmer for 4-5 minutes until peas are tender. Remove from heat and gently stir in 160ml (2/3 cup) cream. Let it cool slightly before serving.
  • Blend pea mixture until velvety smooth in a blender. Heat in a pan over medium-low heat for 3-4 minutes until warmed through.
  • Pour the soup into bowls and add a swirl of cream on top. Sprinkle with pepper and serve with the garlic bacon toasts.
