Creamy prawn curry

Create a fragrant and delicious prawn curry that will transport you to exotic places.
Ingredients:
  • 9.20 gm vegetable oil
  • 5cm piece ginger, finely chopped
  • 5.00 gm madras curry powder
  • 1/2 tsp dried chilli powder
  • 1/2 tsp ground turmeric
  • 2 tomatoes, peeled, deseeded, finely chopped
  • 1/2 cinnamon stick
  • 2 bay leaves
  • 400ml can coconut cream
  • 510.00 gm chicken style liquid stock
  • 1.5kg large green prawns, peeled, deveined, tails intact
Instructions:
  • Warm oil in a large, sturdy saucepan over gentle heat. Introduce ginger and sauté for 2 minutes until tender. Sprinkle in curry powder, chilli powder, and turmeric. Cook for 1 minute until fragrant. Mix in tomatoes, cinnamon, and bay leaves. Stir well.
  • Gradually pour in the luscious coconut cream while stirring continuously. Follow up with the flavorful stock. Crank up the heat to medium and simmer uncovered for 10 minutes, or until the sauce reaches a delightful thickness.
  • Lower the heat to a gentle simmer and gently place the prawns in the pan. Let them cook for around 3 minutes, just until they turn a vibrant pink. Remove and discard the cinnamon. Serve and enjoy!
