Quick and flavorful red prawn curry with creamy sauce, ready in 20 minutes. Perfect for a simple mid-week meal served over rice.
Ingredients:
  • 60g butter
  • 2 brown onions, finely chopped
  • 20.00 gm curry powder
  • 70.00 ml White Plain Flour
  • 40.00 gm caster sugar
  • 500ml (2 cups) Stock Chicken Style
  • 125ml (1/2 cup) Full Cream Milk
  • 40.40 gm pouring cream
  • Fresh lemon juice, to taste
  • 500g green prawns, peeled, deveined, tails intact
Instructions:
  • In a large frying pan, melt the butter over low heat. Sauté the onion for 8-10 minutes until golden. Stir in the curry powder and cook for 2 minutes until aromatic. Remove from heat, then stir in the flour and sugar until coated. Gradually pour in the stock and milk while stirring until well combined. Return the pan to low heat and cook, stirring often, for 3-4 minutes until the mixture boils and thickens.
  • Combine the cream and lemon juice, stirring until well mixed. Toss in the prawns and cook, stirring, for 3-4 minutes until they turn pink and are fully cooked.
