Curried prawn ramen stir-fry recipe

Celebrate with a festive Asian stir-fry - packed with prawns for joy and longevity! Delicious and heartwarming.
Ingredients:
  • 180g Organic Ramen noodles
  • 92g packet Golden Curry Sauce Mix Mild
  • 500ml (2 cups) hot water
  • 36.80 gm vegetable oil
  • 500g green prawns, peeled, deveined, tails intact
  • 2 bunches broccolini, cut into long thin florets
  • 1 red capsicum, deseeded, thinly sliced
  • 4 green shallots, cut into 5cm lengths
  • Sesame seeds, toasted, to serve
Instructions:
  • Boil noodles in a large saucepan according to package instructions, then drain.
  • In a small saucepan, combine the curry mix and hot water. Cook over low heat, stirring frequently, until the mixture is well combined and comes to a boil, about 3-4 minutes. Remove from heat.
  • In a hot wok, sear half of the prawns in oil until golden and cooked through, about 2-3 minutes. Transfer to a plate, then repeat with the remaining prawns.
  • In the wok, heat the rest of the oil. Stir-fry broccolini, capsicum, and the lighter parts of the shallot until just tender, about 2-3 minutes. Add prawns, noodles, and the rest of the shallot. Toss until mixed. Pour in the curry sauce and stir until everything is coated and heated through. Serve the stir-fry in bowls and sprinkle with sesame seeds.
