Elevate traditional Thai curry with succulent prawns for a delicious twist.
Ingredients:
  • 60ml (1/4 cup) vegetable oil
  • 1 bunch shallots, ends trimmed, sliced into 5cm lengths
  • 5cm-piece fresh ginger, peeled, thinly sliced
  • 1 x 114g can masaman curry paste
  • 1 x 1kg pkt frozen peeled prawn cutlets, thawed
  • 1 x 400ml can coconut cream
  • 42.00 gm fresh lime juice
  • Steamed white rice, to serve
  • Lime wedges, to serve
Instructions:
  • In a heavy-based saucepan over medium-high heat, heat oil. Add shallot, ginger, and curry paste. Cook for 2 minutes until fragrant.
  • - Stir-fry prawns for 2 minutes, then add coconut cream and lime juice. Bring to a boil and cook for 6 minutes until prawns curl, change color, and sauce thickens.
  • Portion the rice and curry into serving dishes, then garnish with fresh coriander and accompany with lime wedges for a burst of flavor.
