Try our succulent Middle Eastern sweet lamb curry, perfect with crunchy pappadums and a dollop of creamy yogurt.
Ingredients:
  • 36.80 gm vegetable oil
  • 1 brown onion, finely chopped
  • 2 to 20.00 gm mild curry powder
  • 750g lamb mince
  • 125.00 gm fruit chutney
  • 1 Granny Smith apple, peeled, cored, finely chopped
  • 85.00 gm sultanas
  • 127.50 gm chicken style liquid stock
  • Pappadums, to serve
  • Thick Greek-style yoghurt, to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, sauté the onion in oil for 2 to 3 minutes until tender.
  • Turn up the heat to high and toss in the curry powder and minced ingredients. Keep stirring with a wooden spoon for 5 to 6 minutes until nicely browned.
  • Combine chutney, apple, sultanas, and stock/water in a pot. Bring to a boil, then simmer over medium-low heat for 15-20 minutes until thickened.
  • Fill pappadums with mince mixture and add a dollop of yoghurt on top before serving.
