Ingredients:
  • 36.80 gm vegetable oil
  • 2 brown onions, halved, cut into wedges
  • 2 garlic cloves, crushed
  • 30.00 gm Moroccan spice
  • 1kg diced lamb
  • 375ml vegetable stock
  • 500g sweet potato, peeled, chopped
  • 150g pitted dates
  • 150g dried apricots
  • Fresh coriander, chopped, to sprinkle
  • Couscous, to serve
  • Lemon wedges, to serve
Instructions:
  • In a large saucepan over medium heat, warm 2 tablespoons of vegetable oil. Add 2 halved and wedged brown onions, along with 2 crushed garlic cloves, and cook until soft, about 3 minutes. Stir in 3 tablespoons of Moroccan spice and cook for an additional 2 minutes.
  • Coat and brown 1kg diced Heart Smart lamb. Pour in 1 1/2 cups (375ml) vegetable stock and add 1 cinnamon stick. Bring to a simmer, cover, and cook for 20 minutes.
  • Combine 500g sweet potato, peeled and chopped, 150g pitted dates, and 150g dried apricots. Season generously with salt and freshly ground pepper. Cover and simmer for an additional 20 minutes until the meat is tender. Garnish with fresh coriander and serve alongside couscous and lemon wedges.
