Delicious slow-cooked curry with tender lamb, sweet raisins, and crisp apples.
Ingredients:
  • salt and black pepper to taste
  • 3.5 pounds cubed lamb stew meat
  • 6 tablespoons butter, divided
  • 2 large onion, chopped
  • 2 tablespoons brown sugar
  • 3 tablespoons curry powder
  • 1 large Granny Smith apple - peeled, cored, and cubed
  • 1 cup chicken stock
  • 0.5 cup raisins
  • 1 tablespoon lemon juice
Instructions:
  • Season the flour with salt and pepper inside a plastic bag. Add the lamb and shake to coat evenly. In a large pot over medium-high heat, melt half of the butter. Brown the lamb in batches on all sides for about 5 minutes each; then, set it aside.
  • Lower the heat to medium and incorporate the rest of the butter. Combine the onions, cooking until soft and translucent, should take around 5 minutes. Add the brown sugar, curry powder, apples, chicken stock, raisins, and the browned lamb. Increase the heat to medium-high, let it come to a boil, then lower the heat to medium-low, cover, and simmer until the lamb is very tender, for about 1 to 1 1/2 hours. Finish it off by stirring in the lemon juice and cook for an additional 2 minutes before serving.
