Easy Curried Chicken and Couscous

Simple ingredients transformed into an exotic delight!
Ingredients:
  • 1 3/4 cups water
  • 1 cup uncooked couscous
  • 1 can (10 3/4 ounces) condensed reduced-fat cream of chicken soup
  • 1/2 cup water
  • 1 1/2 teaspoons curry powder
  • 1 1/2 cups cut-up cooked chicken
  • 2 cups frozen mixed vegetables, thawed
Instructions:
  • In a nonstick skillet, bring 1 3/4 cups of water to a boil. Add couscous, then remove from heat. Cover and let it sit for about 5 minutes until water is absorbed. Transfer couscous to a large serving platter to keep warm.
  • In a skillet, bring soup, 1/2 cup water, curry powder, chicken, and vegetables to a boil. Lower heat, cover, and simmer for 3 to 5 minutes until vegetables are tender. Pour the chicken mixture over couscous.
