Quick and easy curried cauliflower soup, cozy for chilly nights, and paleo-friendly.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 0.5 onion, sliced, or to taste
  • 3 carrots, cut into 1/2-inch slices
  • 0.5 red bell pepper, sliced
  • 3 cloves garlic, peeled, or more to taste
  • 1 head cauliflower, chopped
  • 1 (32 fluid ounce) container chicken stock, or as needed
  • 2 tablespoons yellow curry powder
  • 4 dashes hot sauce (such as Tapatio®), or more to taste
Instructions:
  • In a large pot, heat olive oil over medium heat. Sauté onion, carrots, red bell pepper, and garlic until softened, for about 5 to 10 minutes. Add cauliflower and chicken broth, bring to a boil. Simmer until cauliflower is tender, approximately 10 minutes.
  • Blend the hot soup until smooth using a hand blender.
  • Add curry powder, butter, hot sauce, salt, and pepper to the soup in the pot. Simmer over low heat for another 15 minutes until flavors are fully blended.
