Creamy pumpkin and celeriac bake

Elevate weekday meals with this make-ahead and versatile side dish, perfect for easy and quick dinners.
Ingredients:
  • 900g pumpkin
  • 300g celeriac, peeled, halved, cut into 3mm slices
  • 500.00 ml light thickened cooking cream
  • 100g reduced-fat fetta, crumbled
  • 62.50 ml fresh chives, chopped
  • 3 thick slices sourdough bread, cut into 1cm pieces
  • Olive oil cooking spray
Instructions:
  • Preheat your oven to 180C (160C for fan-forced).
  • In a round baking dish, create layers of pumpkin and celeriac. In a jug, combine cooking cream, crumbled fetta, and chopped chives, then pour the mixture evenly over the vegetables in the dish.
  • Cover the vegetables with a layer of bread and then cover it with foil.
  • Bake for 1 hour, or until vegetables are tender. Remove foil, spray with oil, and bake for an additional 15 minutes until the top is golden. Allow it to rest for 5 minutes before serving.
