Creamy pumpkin and pear bisque topped with tangy goat cheese.
Ingredients:
  • 1 (2 pound) pie pumpkin, peeled and coarsely chopped
  • 3 pears - peeled, cored, and sliced
  • 1 tablespoon olive oil
  • 6 slices bacon, diced
  • 0.5 onion, diced
  • 0.5 bulb fennel, diced
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 0.5 teaspoon ground cinnamon
  • salt and ground black pepper to taste
  • 4 cups chicken broth
  • 0.5 cup crumbled goat cheese
Instructions:
  • Preheat the oven to 425°F (220°C) for a perfect bake.
  • On a rimmed baking sheet, arrange pumpkin chunks on one side and sliced pears on the other. Drizzle with olive oil and toss to coat evenly.
  • Roast the pumpkin in the preheated oven, making sure to stir halfway through, until it is fork-tender, which should take about 30 minutes.
  • In a large pot over medium heat, sizzle crispy bacon for 5 minutes. Stir in onion and fennel; sauté until onion turns translucent, approximately 5 minutes. Introduce butter and garlic; season with cinnamon, salt, and pepper. Toss in pumpkin and pears. Simmer for 3 to 4 minutes.
  • Cover all the vegetables with chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes. Puree the soup using an immersion blender until smooth. Serve hot, garnished with crumbled goat cheese.
