Make a comforting rice pudding by cooking rice with milk, brown sugar, cinnamon, vanilla, and raisins for a creamy and cozy dessert.
Ingredients:
  • 2 1/2 cups (600 ml) of whole milk
  • 1/3 cup (66 grams) of uncooked short grain white rice
  • Pinch of salt
  • 1/4 cup (50 grams) dark brown sugar
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of cinnamon
  • 1/3 cup (40 grams) raisins
Instructions:
  • In a sturdy saucepan, bring the milk, rice, and salt to a boil over high heat. Reduce heat and simmer partially covered until rice is tender, about 20-25 minutes, stirring occasionally to prevent sticking.
  • Combine egg and sugar in a small bowl until smooth. Gradually stir in 1/2 cup of the hot rice mixture, whisking vigorously after each addition.
  • Return the egg mixture to the pan with rice and milk. Cook over low heat until thickened at about 160°F (71°C), being careful not to let it come to a boil to prevent curdling. Remove from heat and stir in vanilla, raisins, and cinnamon. Pudding will thicken as it cools. Serve warm or cold. Don't forget to rate and review!
