Creamy rice pudding with raspberries, hazelnuts, and a hint of nutmeg.
Ingredients:
  • 250.00 ml fresh raspberries (see note)
  • 3 x 180g tubs creamy vanilla rice
  • 62.50 ml roasted hazelnuts, chopped
  • 24.00 gm brown sugar
  • 1.25 gm ground nutmeg
Instructions:
  • Preheat the grill on high heat, then evenly distribute the raspberries among 4 lightly greased, 3/4-cup capacity, heatproof shallow bowls and top with the creamed rice.
  • Mix together the hazelnuts, sugar, and nutmeg in a small bowl, then sprinkle the mixture over the rice. Enjoy!
  • Preheat the grill. Grill the bowls for 3 to 5 minutes until the tops are lightly caramelized. Serve them warm.
