Indulge in effortless white chocolate mousse - ideal for any occasion.
Ingredients:
  • 150g good-quality white chocolate, broken into squares
  • 4 egg whites
  • 70g (1/3 cup) caster sugar
  • 160ml (2/3 cup) thickened cream
  • 1 x 120g punnet raspberries
Instructions:
  • Melt the chocolate in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Stir with a metal spoon for 3-4 minutes until smooth. Remove from heat.
  • Using an electric beater, whip the egg whites in a medium, clean, dry bowl until stiff peaks form. Gradually mix in half of the sugar until dissolved. Incorporate the rest of the sugar and beat until glossy. Fold in the cream until thickened, then gently combine the white chocolate using a metal spoon.
  • Set aside 16 raspberries. Spoon half of the remaining raspberries into 4 serving glasses. Layer each with half of the luscious white chocolate mousse. Repeat with the remaining raspberries and mousse. Garnish with the reserved raspberries and chill in the freezer for 15 minutes to set.
  • Serve immediately after removing from the freezer.
