Creamy Rice Pudding

Delicious rice pudding with golden raisins. Top with cinnamon or nutmeg and enjoy warm.
Ingredients:
  • 1.5 cups cold water
  • 0.75 cup uncooked white rice
  • 2 cups milk, divided
  • 0.66666668653488 cup golden raisins
  • 0.5 teaspoon vanilla extract
Instructions:
  • In a saucepan, bring water to a boil over medium heat. Add rice, then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender and liquid is absorbed.
  • In a clean saucepan, mix cooked rice, 1 1/2 cups of milk, sugar, and salt. Cook over medium heat, stirring frequently, until thick and creamy, approximately 15 minutes.
  • Combine the remaining 1/2 cup of milk, beaten egg, and raisins into the mixture. Cook for an additional 2 minutes while stirring continuously. Remove from heat and mix in butter and vanilla until well combined. Serve the dish warm.
