Ingredients:
  • 0.5 cup shortening
  • 1.5 teaspoons baking powder
  • 2 (16 ounce) containers ricotta cheese
  • 2 teaspoons ground cinnamon
  • 1 pinch ground cinnamon, for garnish
  • 1 pinch white sugar, for sprinkling
Instructions:
  • Preheat oven to 350°F (175°C).
  • Combine the flour, 1/2 cup sugar, shortening, 2 eggs, baking powder, 2 teaspoons vanilla extract, and salt in a bowl until a smooth dough forms.
  • Place dough into a 9-inch pie dish, saving 1 tablespoon for topping.
  • In a bowl, combine ricotta cheese, 3/4 cup sugar, 2 eggs, 2 teaspoons cinnamon, and 2 teaspoons vanilla extract until smooth; then pour the filling into the pie dish.
  • Take the reserved dough and divide it into 3 equal portions. Flatten each portion into a disc shape and place them on top of the pie filling.
  • If desired, generously dust the pie with a touch of cinnamon and a hint of sugar.
  • Bake in the oven until the crust turns a beautiful golden brown and the filling starts to set, approximately 75 minutes.
  • Refrigerate pie until completely firm, around 3 hours.
