Ingredients:
  • 1 tablespoon butter
  • 1 large onion, thinly sliced
  • 6 mushrooms, sliced
  • 1 teaspoon brown sugar
  • 1 (16 ounce) package potato gnocchi
  • 20 peeled and deveined large shrimp (21 to 30 per pound)
  • 3 tablespoons reduced-fat sour cream
  • 1 teaspoon paprika
  • 1 pinch saffron
  • salt to taste
  • 2 tablespoons shredded fresh basil
Instructions:
  • In a large skillet over medium heat, melt the butter until it sizzles. Add the onion, mushrooms, and brown sugar, stirring until the onion turns a rich brown color, approximately 10 minutes. Set aside the caramelized onions.
  • Bring salted water in a large pot to a rolling boil. Add gnocchi and cook until they float to the surface, about 3 minutes. Drain and keep warm.
  • Heat a skillet over medium-high heat, add shrimp and cook until pink and opaque, about 5 minutes. Stir in caramelized onions, sour cream, paprika, and saffron. Simmer briefly, then fold in cooked gnocchi and season with salt to taste.
  • Transfer the gnocchi into a serving dish, then garnish with shredded basil and Parmesan cheese before serving.
