Creamy polenta with Parmesan, a show-stopping side dish for dinner.
Ingredients:
  • 2.25L (9 cups) chicken style liquid stock
  • 340g (2 cups) fine polenta (cornmeal)
  • 100g butter, at room temperature
  • 40.00 ml finely grated Parmesan
  • 40.00 ml finely chopped fresh continental parsley
  • Salt & ground black pepper, to taste
  • Parmesan shavings, to serve
Instructions:
  • In a large heavy-based saucepan, bring the stock to a boil over high heat. Gradually pour in the polenta in a steady stream, stirring constantly with a wooden spoon.
  • Lower the heat to medium-low and cook, stirring often, for 35 minutes or until the polenta thickens to a creamy consistency. Watch as the bright yellow color transforms into a soothing pale yellow hue and the grains become tender.
  • Stir in the butter, grated Parmesan, and parsley until the butter is melted and everything is well combined. Season generously with salt and pepper to taste.
  • Garnish with Parmesan shavings and a dash of black pepper before serving.
