Creamy Spiced Pumpkin Soup

Cozy up with a velvety pumpkin and apple soup, spiced with fall flavors, perfect for chilly evenings.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 1 medium onion, chopped
  • 0.5 apple, peeled and diced
  • 1 large clove garlic, minced
  • 1 teaspoon minced fresh ginger root
  • 0.5 teaspoon chopped fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 0.125 teaspoon ground cloves
  • 3 cups Swanson® Unsalted Chicken Broth
  • 2 cups fresh pumpkin puree
  • 0.5 cup heavy cream
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, chopped
  • 0.5 cup sour cream
  • 0.5 cup seasoned croutons
Instructions:
  • In a large stock pot over medium-high heat, heat olive oil. Cook onion until translucent for about 3 minutes. Add apple, garlic, ginger, and thyme and cook until fragrant for about 30 seconds. Season with salt, pepper, cinnamon, and cloves. Stir in Swanson® Unsalted Chicken Broth and pumpkin puree; combine well. Bring to a boil, then simmer gently until flavors meld and apples are very soft, for about 30 minutes.
  • Take the pot off the heat and use an immersion blender to puree the soup until smooth. Place the pot back on the stove, bring the soup to a boil, then simmer for another 30 minutes.
  • Take the pot off the heat and blend in the cream. Serve with assorted toppings such as crumbled bacon, chopped green onions, sour cream, and seasoned croutons.
