Elevate pantry pasta with creamy spinach sauce for quick and delicious meals.
Ingredients:
  • 500g fusilli or other short pasta
  • 50g breadcrumbs
  • Finely grated zest of 1 lemon
  • 1 large garlic clove, crushed
  • 82.50 ml chopped flat-leaf parsley
  • 200g baby spinach
  • 200ml creme fraiche or sour cream
Instructions:
  • - Preheat the grill to medium heat. - Cook pasta in a large saucepan of boiling salted water following package instructions.
  • Spread breadcrumbs on a baking sheet and grill for 2-3 minutes until toasted, stirring halfway through. Transfer to a bowl, cool slightly, then mix in the zest, garlic, and parsley. Season with sea salt and freshly ground black pepper.
  • After cooking the pasta, toss it back in the pan. Mix in spinach and creme fraiche until spinach wilts. Stir in half of the gremolata breadcrumbs. Serve in four bowls and sprinkle with the rest of the breadcrumbs.
