Steak rolls with creamy Hollandaise sauce and salad - a guaranteed family favorite!
Ingredients:
  • 1/4 green cabbage, finely shredded
  • 1/4 red cabbage, finely shredded
  • 1 small carrot, peeled, grated
  • 6.00 green onions, thinly sliced
  • 37.60 gm sour cream
  • 1/2 small lemon, juiced
  • 18.20 gm olive oil
  • 4 scotch fillet steaks, trimmed
  • 1 Turkish bread loaf, cut into 4, split, toasted
  • 125.00 ml white wine vinegar
  • 8 black peppercorns
  • 1 tsp dried tarragon
  • 4 egg yolks
  • 125g butter, melted
Instructions:
  • Create a flavorful mixture by simmering vinegar, green onion, peppercorns, and tarragon in a saucepan, then strain and let it cool. Process 2 tablespoons of the mixture with egg yolks in a food processor for 30 seconds. Slowly pour in melted butter while processing until a slightly thick hollandaise sauce forms. Transfer to a bowl and cover with plastic wrap.
  • Combine cabbage, carrot, green onion, sour cream, and 1 tablespoon lemon juice in a large bowl, ensuring all ingredients are mixed well.
  • In a non-stick frying pan over medium-high heat, heat 2 teaspoons of oil. Cook the steaks in 2 batches for 3 to 4 minutes on each side for medium doneness or to your preferred level of doneness.
  • Layer a generous amount of coleslaw onto the Turkish bread bases, then add the steaks on top. Drizzle with decadent hollandaise sauce and cover with the bread tops before serving.
