Creamy Sweet Potatoes

"Sweet and savory veggie side dish that tastes like dessert."
Ingredients:
  • 1 can (18 ounces) vacuum-pack sweet potatoes
  • 1/2 cup vanilla fat-free yogurt
  • 1 tablespoon molasses
  • 1 tablespoon butter or margarine
  • 1/8 teaspoon salt
  • 2 tablespoons chopped pecans
Instructions:
  • In a 2-quart saucepan, vigorously mash the sweet potatoes until smooth. Fold in all the ingredients except the pecans.
  • Heat gently for 6 to 7 minutes, stirring often until warmed. Top it off with a generous sprinkle of pecans.
