Indulge in a savory tomato meatball rice casserole for a comforting and delectable dinner option.
Ingredients:
  • 1 lb. extra-lean ground beef
  • 1/4 cup finely chopped onion
  • 1/4 teaspoon pepper
  • 3/4 cup uncooked converted long-grain rice
  • 1 cup half-and-half
  • 1 (10 3/4-oz.) can condensed tomato soup with roasted garlic and herbs
  • 1 (14.5-oz.) can diced tomatoes with roasted garlic, undrained
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat the oven to 350°F. Grease an 8-inch square (2-quart) glass baking dish with nonstick cooking spray. In a medium bowl, thoroughly mix ground beef, onion, salt, and pepper. Shape the mixture into 12 meatballs and arrange them in the prepared baking dish.
  • In a medium bowl, thoroughly mix all remaining ingredients except parsley. Pour this flavorful mixture over the meatballs and cover tightly with foil.
  • Bake at 350°F for 1 1/2 hours or until rice is tender. Rest for 10 minutes, then garnish with parsley before serving.
