Indulgent tomato ravioli with roasted red peppers by Latina™ Fresh and taste.com.au.
Ingredients:
  • 2 red capsicums, quartered, seeded
  • 625g Latina™ Fresh Filled Pasta, Beef Ravioli
  • 18.20 gm olive oil
  • 1 red onion, thinly sliced
  • 1 garlic clove, thinly sliced
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 60ml thickened cream
  • 40.00 ml oregano leaves
Instructions:
  • 1. Preheat the grill to high heat. 2. Grill the capsicums, skin-side up, until the skin blackens and blisters, about 5 minutes. 3. Place the grilled capsicums in a bowl, cover with plastic wrap, and set aside for 5 minutes to help lift the skin. 4. Peel the capsicums and thinly slice them.
  • Cook Latina™ Fresh Filled Pasta, Beef Ravioli according to package instructions until just tender. Drain thoroughly.
  • In a large frying pan over medium heat, heat oil. Add onion and garlic, cook and stir until onion softens, about 5 minutes. Stir in diced tomatoes and capsicum and bring to a simmer. Pour in cream, season with salt and pepper. Add ravioli and oregano, toss to combine. Divide into serving bowls and serve right away.
