Creamy tortellini soup with spinach, Boursin cheese, and Italian sausage cooked quickly in one pot. Ready in 20 minutes.
Ingredients:
  • 1 pound bulk Italian sausage
  • 14.5 (14.5 ounce) cans diced tomatoes, drained
  • 9 ounces refrigerated cheese tortellini
  • 1 cup vegetable broth
  • 0.75 cup evaporated milk
  • 0.25 cup heavy cream
  • 1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®), softened
  • 4 cups baby spinach
  • Italian seasoning to taste
  • 2 tablespoons freshly grated Parmesan cheese, or to taste
Instructions:
  • Brown the sausage in a large stockpot over medium heat, using a spatula to break it up, until fully cooked and evenly browned, approximately 5 minutes.
  • Add a harmonious mix of tomatoes, tortellini, vegetable broth, creamy evaporated milk, rich heavy cream, and indulgent Boursin cheese into the mixture. Mix gently until well combined.
  • Simmer until the tortellini float to the top and the filling is hot, approximately 8 minutes. Add spinach and continue cooking until wilted, around 2 minutes. Season with Italian seasoning and Parmesan cheese.
