Creamy vanilla rice pudding with apricot jam

Indulgent creamy pudding, perfect with any jam!
Ingredients:
  • 515.00 gm milk
  • 505.00 gm pure cream
  • 1 tsp vanilla bean paste
  • 1 cinnamon stick
  • 1 tsp finely grated lemon rind
  • 70.95 gm caster sugar
  • 132.00 gm white medium-grain rice
  • 82.50 ml apricot jam, warmed
Instructions:
  • In a saucepan over medium heat, combine milk, cream, vanilla, cinnamon, lemon rind, and sugar. Stir and cook until almost simmering for about 10 minutes (avoid boiling).
  • Stir in the rice and lower the heat. Simmer gently for 30 to 40 minutes until the rice is tender and the liquid thickens. Take off the heat and let it cool for 5 minutes. Remove the cinnamon stick. Portion the rice into bowls and top with jam before serving.
