Delicious vegan corn chowder made with soy milk, olive oil, and veggie bouillon. Perfect as a starter or main dish, low-fat and satisfying.
Ingredients:
  • 1 small onion, chopped
  • 1 cup celery, chopped
  • 1 cup carrots, chopped
  • 1 clove garlic, minced
  • 2.5 cups water
  • 2 cubes vegetable bouillon
  • 2 cups corn
  • 2 cups soy milk
  • 1 tablespoon flour
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
Instructions:
  • In a large skillet over medium heat, heat oil until shimmering. Add onions and celery, cook until lightly golden. Add carrots and garlic, cook until garlic is just starting to turn golden.
  • Once the water boils, dissolve bouillon cubes, then add corn and vegetables from the skillet. Simmer until vegetables are tender, adding water if needed. Lower heat and pour in 1 cup soy milk. Mix well, then incorporate the remaining soy milk. Swiftly whisk in flour, followed by parsley, garlic powder, salt, and pepper. Stir constantly until chowder thickens, around 15 to 20 minutes.
