Creamy Vegetarian Pasta Sauce

Velvety vegetable pasta sauce with tangy sour cream. Pair with your favorite noodles.
Ingredients:
  • 1 (12 ounce) package penne pasta
  • 2 tablespoons olive oil
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 cup sliced fresh mushrooms
  • 6 ounces frozen chopped spinach, thawed and drained
  • 2 tomatoes, chopped
  • 3 cups vegetable broth
  • 7 ounces sour cream
  • 1 tablespoon tomato paste
  • salt and freshly ground black pepper to taste
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh basil
Instructions:
  • 1. Boil a generous amount of salted water in a large pot. Add penne pasta and cook, stirring occasionally, until al dente, for about 11 minutes.
  • In a large skillet over medium heat, heat olive oil, then add zucchini, bell pepper, mushrooms, spinach, and tomatoes. Cook until vegetables have softened, approximately 3-4 minutes. Stir in broth, sour cream, and tomato paste. Season with salt and pepper, bring to a boil, then remove from heat. Add cooked penne to the sauce, along with parsley and basil.
