Creole Flounder

Easy oven-baked flounder fillets topped with flavorful tomatoes and bell peppers.
Ingredients:
  • 2 pounds flounder or other mild flavored fish fillets
  • 2 medium tomatoes, chopped (1 1/2 cups)
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1/3 cup lemon juice
  • 2 teaspoons vegetable oil
  • 1 teaspoon salt
  • 2 teaspoons instant minced onion
  • 1 teaspoon dried basil leaves
  • 1/4 teaspoon coarsely ground black pepper
  • 4 drops red pepper sauce
Instructions:
  • Preheat your oven to a piping hot 500°F. Grease a 13x9x2-inch rectangular baking dish. If your fish fillets are large, cut them into 8 pieces. Arrange the fish in the baking dish and generously spoon over the flavorful mixed ingredients.
  • Bake the fish without a cover for 5 to 8 minutes or until it easily flakes with a fork. If desired, decorate with rings of green bell pepper.
