Effortlessly delicious fried chicken: coat in Creole seasoning, fry, oven finish.
Ingredients:
  • 1 gallon peanut oil, or as needed
  • 1.5 pounds chicken wings
  • 1.5 pounds chicken legs
  • 1 tablespoon Creole seasoning (such as Tony Chachere's®), or more to taste
Instructions:
  • Begin by heating oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C), while preheating the oven to 400 degrees F (200 degrees C).
  • Sprinkle chicken pieces generously with Creole seasoning.
  • Fry 6 to 7 pieces of chicken at a time in hot oil until the skin is light brown, and the pieces float, for about 9 to 12 minutes. Remove and drain on paper towels before transferring to a baking sheet. Repeat with remaining batches.
  • Roast chicken in the preheated oven until fully cooked, about 10 minutes. Verify doneness by checking for clear juices and a thermometer reading of 165 degrees F (74 degrees C) near the bone. Rest for 15 to 20 minutes before serving.
