Indulge in a rich, creamy cheese sauce with Gruyere, Cheddar, and Parmesan, elevated by flavorful andouille sausage for a Louisiana-inspired baked macaroni and cheese.
Ingredients:
  • 1 (8 ounce) package elbow macaroni
  • 1 cup andouille sausage, diced
  • 4 tablespoons butter
  • 0.75 cup bread crumbs
  • 0.5 cup grated Parmesan cheese
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 tablespoon all-purpose flour
  • 0.5 teaspoon paprika
  • 0.5 teaspoon prepared mustard
  • 1.5 cups milk
  • 1 cup grated Gruyere cheese
  • 1.5 cups shredded Cheddar cheese
  • black pepper to taste
Instructions:
  • Boil macaroni in a pot of water until perfectly tender. Drain well.
  • Cook the andouille sausage in a small pan over medium heat until done. Set aside. In the same pan, melt 1 tablespoon of butter over medium heat. Stir in bread crumbs until coated, cool, and then fold in Parmesan. Set aside.
  • Melt 1 tablespoon of butter in a medium saucepan. Cook onions and celery until they are soft and translucent. Transfer them to a bowl.
  • In the same saucepan on medium heat, melt 1 tablespoon of butter. Whisk in the flour to create a white roux, making sure not to let it brown. Add paprika and mustard, then pour in milk. Once it comes to a boil, mix in Gruyere and Cheddar cheeses. Simmer and stir occasionally until the mixture thickens enough to coat the back of a spoon, approximately 10 minutes. Season with salt and pepper to your liking.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan or similar casserole dish. Add cooked macaroni, andouille sausage, sauteed vegetables, and cheese mixture to the dish. Sprinkle breadcrumb and Parmesan mixture over the top before baking.
  • Bake until crust is beautifully golden brown, about 20 minutes.
