Spice up your week with Creole prawn salad.
Ingredients:
  • 5.00 gm sweet paprika
  • 1/4 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried red chilli flakes
  • 500g peeled green prawns, deveined, tails intact
  • 21.00 gm lime juice
  • 2 baby cos lettuces, chopped
  • 200g grape tomatoes, halved
  • 150g roasted red capsicums (not in oil), sliced
  • 400g can black beans, rinsed, drained
  • Lime wedges
Instructions:
  • In a bowl, mix paprika, thyme, oregano, and half of the chilli flakes. Add prawns and toss until coated.
  • Preheat barbecue or chargrill over medium-high heat. Lightly oil prawns and grill in batches for 1–2 minutes per side until cooked through.
  • In a large bowl, whisk together the juice, oil, and remaining chili flakes. Add lettuce, tomatoes, capsicum, and beans, then toss to combine. Serve the prawns with the salad and lime wedges.
