Creole Red Beans and Rice Fritters

Golden, crispy award-winning fritters filled with creamy red bean and rice filling. Enjoyable for all.
Ingredients:
  • 1 cup cooked red beans
  • 1 cup cooked rice
  • 0.25 cup finely chopped ham
  • 4 tablespoons panko bread crumbs
  • 3 large eggs, divided
  • 0.5 teaspoon Cajun or Creole seasoning, divided
  • 0.25 teaspoon ground black pepper
  • 0.25 cup milk
  • 1 cup all-purpose flour
  • 1 cup panko bread crumbs
  • vegetable oil for deep frying
  • 0.125 teaspoon salt
Instructions:
  • Combine red beans, rice, ham, green onions, panko bread crumbs, eggs, Cajun seasoning, and black pepper in a bowl until a cohesive mixture forms.
  • Shape the mixture into small balls the size of hush puppies, pressing firmly to maintain their shape. Refrigerate for at least 1 hour, or preferably overnight.
  • Combine milk and the last egg in a small bowl to create an egg wash. Then, mix the rest of the bread crumbs with the remaining Cajun seasoning in a shallow dish. Next, coat the chilled balls in flour, dip in the egg wash, and roll in the bread crumb mixture.
  • Preheat oil in a deep-fryer or large saucepan to 360-375°F (182-190°C).
  • Fry fritters in hot oil until they turn golden brown, which should take around 10 minutes. Once done, drain them on paper towels and sprinkle with salt for extra flavor.
