Irresistible gourmet dessert with a modern twist on classics.
Ingredients:
  • 150ml milk
  • 75g (1/2 cup) plain flour
  • Melted butter, to brush
  • 500g ricotta
  • 4.40 gm vanilla extract
  • 2 oranges, rind grated
  • 60.00 ml chopped dark chocolate
  • 40ml (2 tbsp) thin cream
  • 40.00 ml toasted slithered almonds
  • 70.95 gm caster sugar
  • 60.00 ml glace fruits
  • 40ml (2 tbsp) Grand Marnier
  • 200g dark chocolate, chopped
  • 250ml (1 cup) thin cream
Instructions:
  • Combine egg, milk, flour, and a pinch of salt in a food processor until a smooth batter forms. Transfer the batter to a jug and let it sit for 15 minutes.
  • Combine ricotta with the filling ingredients in a bowl, beat well, and refrigerate.
  • Preheat a crepe pan and brush it with melted butter. Pour a thin layer of batter and cook until golden. Flip carefully and cook briefly on the other side. Set aside and repeat until you have made 12 crepes. Store with baking paper between each crepe, wrap in foil, and keep at room temperature until ready to serve. Avoid refrigerating.
  • Create a decadent warm chocolate sauce by melting dark chocolate and cream together in a heatproof bowl set over a pot of simmering water, ensuring the bowl does not touch the water. Stir occasionally until a luxurious thick sauce is achieved.
  • Spoon the ricotta mixture onto the center of each crepe, then fold them into quarters. Serve 2 crepes on each plate and generously drizzle with the sauce.
