Walnut crepes with ricotta filling - a perfect dessert!
Ingredients:
  • 57.50 gm walnuts
  • 125.00 ml plain flour
  • 10.00 gm caster sugar
  • 3 eggs, lightly beaten
  • 36.80 gm vegetable oil
  • 193.13 gm milk
  • Canola oil spray
  • 200g fresh ricotta cheese
  • 117.98 gm honey
Instructions:
  • Finely chop walnuts in a food processor. Sift flour into a bowl and mix in sugar and walnuts. In a separate container, whisk together egg, oil, and milk. Gradually combine the wet ingredients with the dry ingredients until the batter is smooth. Cover the mixture and let it rest for 30 minutes.
  • Prepare the non-stick frying pan by spraying it with oil and heating it over medium heat. Pour 1/4 cup of batter into the pan and swirl to cover the base. Cook for 2 minutes until light golden, then flip and cook for another minute. Transfer to a plate and keep warm. Repeat with the rest of the mixture to make a total of 8 crepes.
  • In a bowl, mix ricotta and 2 tablespoons of honey together. Spread 1 1/2 tablespoons of ricotta mixture onto a crepe and roll it up. Repeat with the rest of the ricotta mixture and crepes. Serve the crepes halved and drizzle with the leftover honey.
