Maple frosted walnut-pumpkin cookies - a guaranteed crowd-pleaser!
Ingredients:
  • 1 cup shortening (such as Crisco®)
  • 1 egg
  • 1 cup canned pumpkin
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 cup chopped walnuts
  • 4 cups powdered sugar
  • 0.5 cup butter, softened
  • 1 tablespoon milk, or as needed
  • 1 teaspoon maple extract, or to taste
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Combine sugar and shortening in a bowl, followed by adding the egg. Stir in pumpkin and vanilla extract until well combined. Incorporate flour, baking soda, baking powder, cinnamon, and salt until mixture is smooth. Gently fold in walnuts.
  • Drop spoonfuls of cookie dough onto baking sheets using small teaspoons or a cookie scoop.
  • Bake until edges are golden, about 10-12 minutes. Let it cool.
  • Using an electric mixer, blend powdered sugar and butter until smooth. Gradually mix in milk until desired frosting consistency is achieved. Gently fold in maple extract until fully incorporated.
  • Generously coat the cooled cookies with maple frosting.
