Fall-inspired pumpkin thumbprint cookies filled with honey-walnut filling.
Ingredients:
  • 2.5 cups whole wheat flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 1 cup pumpkin
  • 1 cup honey
  • 0.5 cup butter, melted
  • 2 teaspoons vanilla extract
  • 0.5 cup crushed walnuts
  • 1 tablespoon butter, softened
  • 1 teaspoon honey
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line 2 baking sheets with parchment paper.
  • Combine whole wheat flour with aromatic cinnamon, leavening agents baking powder and baking soda, flavorful nutmeg, and a touch of salt in a bowl.
  • In a separate bowl, blend pumpkin puree, honey, melted butter, and vanilla extract. Pour over the flour mixture and stir until well combined.
  • Spoon cookie dough onto baking sheets, then create a dimple in the center of each using a floured finger.
  • Combine walnuts, butter, and honey to create a luscious filling. Spoon the walnut mixture evenly onto each cookie center.
  • Bake in the preheated oven for about 15 minutes or until the edges are firm and start to brown.
