Air fryer walnut and pumpkin pie cookies, a delightful blend of mini pies and cookies, ideal for holiday treats or a morning pick-me-up.
Ingredients:
  • 0.5 cup pumpkin puree (such as Libby's®)
  • 3 tablespoons white sugar
  • 1.5 tablespoons finely chopped walnuts
  • 1 teaspoon pumpkin pie spice
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon vanilla extract
  • 1 (14.1 ounce) package refrigerated pie crusts
  • 1 large egg, beaten
  • 1 teaspoon water
  • 1 tablespoon cinnamon sugar, or as needed
  • 0.25 cup confectioners' sugar, or more to taste
  • 0.5 tablespoon maple syrup, or more to taste
  • 0.5 tablespoon milk
Instructions:
  • Combine pumpkin puree, sugar, walnuts, pumpkin pie spice, cinnamon, and vanilla in a bowl, whisk until fully blended.
  • Place the pie crusts on a lightly floured surface and roll them out thinly with a rolling pin. Cut each pie crust into 20 circles using a 2 1/4-inch round biscuit or cookie cutter, totaling 40 circles.
  • Carefully spoon a luscious teaspoon of pumpkin filling into each of the 20 circles, ensuring to leave a delightful 1/3 inch border around the edges. Be mindful not to overfill to maintain the perfect balance.
  • Moisten the edges of each pie crust circle with a wet finger. Place a second pie crust circle on top and seal by pressing down the edges and crimping with a fork. In a small bowl, combine egg and water. Brush the tops of the cookies with the egg mixture and sprinkle with cinnamon sugar.
  • Preheat the air fryer to 360°F (180°C) for optimal cooking temperature.
  • Arrange the cookies in the air fryer basket, ensuring there is enough space between each for optimal air circulation.
  • Bake until beautifully golden for about 7 minutes and then transfer to a cooling rack. If needed, cook in batches and adjust timing based on your air fryer size and type. Keep an eye on them for perfection.
  • Prepare a sweet and glossy glaze by whisking together 1/4 cup confectioners sugar, 1/2 tablespoon maple syrup, and milk until smooth. Adjust consistency by adding more maple syrup if thick or more confectioners' sugar if runny. Drizzle the glaze over cooled cookies and let it set for about 30 minutes before serving.
