Upgrade classic eggplant Parmesan with a healthy twist using walnut bread crumbs in the air fryer for a delicious makeover.
Ingredients:
  • 0.75 cup walnuts, crushed
  • 0.25 cup dry bread crumbs
  • 1 tablespoon dried basil
  • 1 large eggplant, cut into 1/2-inch rounds
  • 0.75 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • sea salt to taste
  • 0.75 cup marinara sauce
  • 8 ounces shredded low-fat mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 pinch dried oregano, or to taste
  • 1 pinch red pepper flakes, or to taste
Instructions:
  • Preheat your air fryer to 375°F (190°C) following the manufacturer's guidelines, then generously spray the basket with cooking spray.
  • Mix crushed walnuts, bread crumbs, and fresh basil in a bowl. Allow the flavors to meld together while you prepare the next step.
  • Place the eggplant slices in a single layer in the air fryer basket, allowing them to slightly overlap. Drizzle the slices generously with cooking spray and then sprinkle with garlic powder, black pepper, and sea salt. Finish by adding the walnut bread crumb mixture on top.
  • Air-fry the rounds until the eggplant is tender and beautifully golden, approximately 8 to 10 minutes.
  • Take out the slices from the air fryer and generously top each one with marinara sauce and a generous amount of mozzarella cheese. Sprinkle with Parmesan cheese, dried oregano, and red pepper flakes.
  • Air-fry until the cheese is hot and bubbly, for 5-7 minutes.
