Air fryer eggplant chips recipe

Crispy air fryer eggplant chips with breadcrumbs, herbs, and parmesan. Healthier than pan-fried with just a touch of oil spray.
Ingredients:
  • 2 eggs
  • 75g (1/2 cup) plain flour
  • 60g (1 1/4 cups) panko breadcrumbs
  • 50g (2/3 cup) finely grated parmesan (see note)
  • 2 tsp dried Italian herbs
  • 1.25 gm ground paprika
  • 4 slender eggplants, cut diagonally into 7mm slices
  • Tomato pasta sauce, warmed, to serve
Instructions:
  • Gently beat the eggs in a shallow bowl. Set the flour in another shallow bowl. Mix the breadcrumbs, parmesan, herbs, and paprika on a large plate.
  • Coat eggplant slices in flour, then dip into egg and breadcrumb mixture, pressing gently to ensure even coating.
  • Place half of the eggplant slices evenly in the air fryer basket. Coat generously with cooking spray and air fry at 200°C for 5 minutes. Flip the eggplant slices, spray with more oil, and air fry for another 5 minutes. Transfer to a plate and repeat with the remaining eggplant slices.
  • Place the eggplant back in the air fryer and reheat for 3 minutes. Serve with the pasta sauce for dipping.
