Air-fryer eggplant Parmesan: gooey, rich, and indulgent meal for two, ready in a flash.
Ingredients:
  • 1 medium eggplant, halved lengthwise
  • 4 tablespoons olive oil, divided
  • 1 pinch kosher salt, divided
  • 0.5 teaspoon ground black pepper, divided
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon chopped fresh basil
Instructions:
  • Slice the eggplant lengthwise and then widthwise to create cubes, being careful not to cut through the skin. Gently turn the eggplant inside out. Repeat with the second half. If the eggplant breaks, shape the outer edges to stand up or use a long skewer to hold it open.
  • Drizzle both halves with a generous coating of 2 tablespoons of oil and sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Transfer to the air fryer basket.
  • Air-fry at 390-400°F for 10 minutes until crispy.
  • Top each eggplant with delicious marinara sauce, gooey mozzarella cheese, and flavorful Parmesan cheese, ensuring every groove is filled. Continue air-frying for an additional 5 minutes.
  • Garnish with freshly chopped basil before serving.
