Inside-out vegie rolls

Get creative with sushi - try making inside-out rolls for a fun twist on traditional sushi.
Ingredients:
  • 430g (2 cups) Japanese Style Sushi Rice, rinsed, drained
  • 750ml (3 cups) cold water
  • 125ml (1/2 cup) sushi seasoning
  • 8 nori sheets
  • 150g (1 cup) toasted sesame seeds
  • 1 avocado, thinly sliced
  • 1 carrot, peeled, cut into matchsticks
  • 1 1/2 Lebanese cucumbers, cut into 5mm-thick batons
  • Soy sauce, to serve
  • Pickled ginger, to serve
  • Wasabi, to serve
Instructions:
  • Rinse the rice until the water runs clear. In a saucepan over high heat, bring the rice and water to a boil. Reduce heat to low, cover, and simmer for 12 minutes or until water is absorbed.
  • Cover and let it steam for 10 minutes. Gently mix in the seasoning with a rice paddle or wooden spoon. Allow it to cool for 15 minutes, stirring occasionally.
  • Lay 1 nori sheet on a bamboo mat. Spread 3/4 cup rice evenly over the nori using damp hands, leaving a 2cm border at the far edge.
  • Evenly scatter 1 tablespoon of sesame seeds over the rice for a visually appealing touch on the roll.
  • Place a large piece of plastic wrap over the rice and carefully flip the nori so it's facing up. Place a bamboo mat under the plastic wrap. Arrange avocado, capsicum, carrot, and cucumber on the rice, 5cm away from the edge closest to you.
  • Wrap the mat around the roll to secure the filling while gently shaping and sealing it. Unwrap the roll. Repeat to make 7 more rolls. Using a wet sharp knife, slice each roll into 6 pieces. Serve with soy sauce, pickled ginger, and wasabi.
