Inside-out vegetable rolls

Kids will love these veggie-filled rolls!
Ingredients:
  • 200.00 gm sushi rice
  • 32.50 gm mirin seasoning
  • 4 asparagus spears, trimmed
  • 4 nori sheets
  • 24.00 gm sesame seeds, toasted
  • 39.60 gm whole-egg mayonnaise
  • 1/2 small yellow capsicum, thinly sliced
  • 1/2 Lebanese cucumber, cut into thin strips
  • 1/2 small carrot, peeled, cut into thin strips
  • 1/2 medium avocado, thinly sliced
Instructions:
  • Prepare the sushi rice: Rinse the rice thoroughly in a sieve until the water runs clear. Let the rice sit in the sieve over a bowl for 10 minutes to drain.
  • In a small saucepan over medium heat, combine rice and 1 cup of cold water. Cover and bring to a boil. Reduce heat to low and simmer covered for 12 minutes, until water is absorbed. Remove from heat and let it stand covered for 10 minutes before serving.
  • Add rice to a spacious ceramic dish. Gently break up lumps using a spatula while gradually incorporating seasoning until rice cools down.
  • Boil a small saucepan of water until bubbling. Cook the asparagus for 2 minutes until vibrant and tender. Drain and then quickly cool in a bowl of chilled water. Drain again before serving.
  • Lay 1 nori sheet, shiny-side down, on a sushi mat. Gently spread 1/4 of the rice mixture over the nori using damp fingers. Sprinkle 2 teaspoons of sesame seeds evenly. Cover with plastic wrap, flip the mat over, and carefully remove the plastic to reveal the nori on top.
  • Spread a generous amount of creamy mayonnaise down the center of the seaweed. Layer thinly sliced capsicum, cucumber, carrot, avocado, and asparagus on top of the mayonnaise. Roll everything tightly using a sushi mat to create a beautiful roll. Gently unroll the mat while keeping the plastic wrap in place.
  • Slice the roll into 8 pieces, discarding the plastic. Repeat with the remaining nori sheets, rice mixture, sesame seeds, mayonnaise, capsicum, cucumber, carrot, and avocado to make a total of 32 pieces. Serve and enjoy!
